Plan the choreography - i.e. the flow of people. Many wedding have slack time and (frankly) dull spots. A major role for your toastmaster / master of ceremonies is to keep your guests involved.
Following the above; consider both ends of the age spectrum. Kids can get bored or overactive; senior people will get tired.
